Cornbread

Recipe

 

Ingredients

  • 2/3 cup all purpose flour

  • 2/3 cup whole wheat pastry flour

  • 2/3 cup corn meal (whizzed Bob’s polenta)

  • ½ corn flour (we used purple corn flour from Eco Center)

  • ½ cup Sugar

  • 1 Tb + 2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/3 cups almond milk

  • ¼ cup + 2 tbl buttery olive oil

  • 1 small egg

Directions

  1. Combine dry ingredients

  2. Beat the eggs really well

  3. Combine wet ingredients

  4. Blend wet ingredients

  5. Combine the wet and dry ingredients

  6. Grease an 8x8” sheet pan

  7. Bake at 325 degrees for about an hour and cover it as needed
