Grain Salad Surgery

Recipe

 

Ingredients

  • 3 cups organic grains (cooked)*

  • 2 cups black beans (cooked)**

  • 1 cup wild rice (cooked)

  • 1 cup cooked corn***

  • 1/2 cup pine nuts

  • 1/2 red onion, chopped

  • Grated carrots - 1 large or 2 small

  • 1/2 cup chopped cilantro

  • Dressing

  • 1 large sweet lime or 3 regular

  • limes (1/3 cup) juice

  • 2/3 cup cider vinegar

  • Good splash of rice wine vinegar

  • ~1 C Olive oil

  • Cumin

  • Guajillo pepper

  • Chimayo pepper

  • Aji chili pepper

  • 1-2 jalapeño finely chopped (red is especially attractive)

  • Salt

  • Pepper

    * Our favorite is 2 C red rice and 1 C sorghum. Other good choices are farro, black rice, and millet.

    ** Can also use cooked beluga lentils instead of black bean
