Kale & Quinoa Bowl

Ingredients

  • One bunch dinosaur kale

  • One half lemon squeezed

  • Good pinch of Himalayan pink or sea salt

  • Quinoa

  • High quality Olive Oil

  • High Balsamic Vinegar

  • Pepper

  • Shredded unsweetened coconut

  • Dried cranberries or cherries

  • Dried apricots

  • Red walnuts or pine nuts

Directions

  1. Clean and destem kale

  2. chop into bite sized pieces

  3. massage in lemon juice and salt until tender.

  4. Add couple of dashes of high quality olive oil

  5. A dash of balsamic vinegar; ground pepper

  6. a handful each of: shredded unsweetened coconut, chopped dried cranberries or cherries, chopped dried apricots; chopped red walnuts or pine nuts, cooked red quinoa, shredded carrots.
