Vegan Cole Slaw

Ingredients

  • 1 lbs finely sliced green cabbage (approximately 1.25 quarts firmly pressed)

  • 1.5 cups vegan mayonnaise

  • ¾ teaspoon celery salt

  • 1 tablespoon apple cider vinegar (can be omitted or substitute with fresh lemon juice)

  • 1 tablespoon granulated sugar (can be substituted with a mild honey)

  • Salt and pepper to taste

Directions

  • Directions
    Mix all ingredients together except salt and pepper

    Add salt and pepper to taste

    Place in refrigerator for at least an hour before serving

Notes

  • This is a creamy style Cole Slaw that uses vegan mayonnaise for its smooth, rich taste and texture. Excellent on a fish sandwich as well as fried tofu sandwich. This is best made a few hours ahead of time so that the flavors can develop.

  • You can add any of the following to the list of ingredients:

  • Shredded carrots (~1/2 cup)

  • Apples, skinned, cored, and diced small (1 apple – a tart apple works best)

  • Sliced green grapes (~1/2 cup)

  • Chopped walnuts (~1/4 cup)

  • Very finely sliced celery (~1/4 cup)

  • If you add chopped walnuts and diced apples to the ingredients, you basically have a great version of a Waldorf Salad.

  • Do not use turbinado-style sugars
