
Red Sauce

Ingredients
5 16oz cans organic whole or diced tomatoes (San Marzona type preferably)
I small can/jar tomato paste
2 large onions; peeled and roughly chopped
6 cloves garlic; peeled and roughly chopped
1/2 cup olive oil
Fresh basil, oregano, thyme; roughly chopped
1 tbls dry rosemary
1/3 cup brown sugar (maybe a little more)
Black pepper and salt to taste
Directions
Chop onions and garlic
Open tomato cans
Clean and chop herbs
Measure oil
Sauté onions and garlic in olive oil in stock pot until translucent (about ~15-20 minutes on low flame)
Add tomatoes, 1 tablespoon salt, 25 grinds black pepper to stock pot and stir gently; cook for ~30 minutes on low stirring occasionally
Add herbs to stock pot and stir gently; cook for an additional ~30 minutes on low stirring occasionally
Add brown sugar to stock pot and stir gently; cook for additional 5 minutes
Taste and adjust seasonings
Let sauce cool for 1 hour
Pour sauce into large metal mixing bowl and puree with blender wand
Taste again and adjust seasonings
