Red Sauce

Ingredients

  • 5 16oz cans organic whole or diced tomatoes (San Marzona type preferably)

  • I small can/jar tomato paste

  • 2 large onions; peeled and roughly chopped

  • 6 cloves garlic; peeled and roughly chopped

  • 1/2 cup olive oil

  • Fresh basil, oregano, thyme; roughly chopped

  • 1 tbls dry rosemary

  • 1/3 cup brown sugar (maybe a little more)

  • Black pepper and salt to taste

Directions

  • Chop onions and garlic

  • Open tomato cans

  • Clean and chop herbs

  • Measure oil

  • Sauté onions and garlic in olive oil in stock pot until translucent (about ~15-20 minutes on low flame)

  • Add tomatoes, 1 tablespoon salt, 25 grinds black pepper to stock pot and stir gently; cook for ~30 minutes on low stirring occasionally

  • Add herbs to stock pot and stir gently; cook for an additional ~30 minutes on low stirring occasionally

  • Add brown sugar to stock pot and stir gently; cook for additional 5 minutes

  • Taste and adjust seasonings

  • Let sauce cool for 1 hour

  • Pour sauce into large metal mixing bowl and puree with blender wand

  • Taste again and adjust seasonings
