Vegan Cream Style Corn

Ingredients

  • 12 ears fresh corn, shucked, cleaned, and cut off all kernels (save corn cobs)

  • Salt

Directions

  1. Separate the cut corn into two equal amounts

  2. Place corn cobs in stock pot and just cover with water. Bring to a simmer uncovered and let cook 30-40 minutes. The corn stock should reduce somewhat. Once reduced remove cobs and season with salt.

  3. Place ½ of the amount of corn in a blender and puree until very smooth. Strain the corn pulp using a conical steel strainer (you may need to push on the solids to extract maximum liquid. Retain the corn pulp liquid.

  4. Place the other ½ amount of corn into a saucepan and just slightly cover with corn stock. Add all the strained corn pulp and cook on a strong simmer, stirring occasionally, until you have reached desired consistency (the starch in the pulp with help thicken and provide the creaminess).

  5. Adjust seasonings and serve (you can add chopped roasted red bell peppers or chopped roasted pasilla peppers for added color and taste).
